As a child, Chef Croux gravitated toward the kitchen, inspired by pop culture and encouraged by hands-on experience helping his mother with her catering business. Even at a young age, he showed natural talent and confidence, earning praise for dishes he prepared himself. Those early moments laid the foundation for a lifelong dedication to cooking.
During his teenage years, Chef Croux gained professional experience working in restaurants throughout Northern California. His first kitchen job introduced him to the fundamentals of restaurant operations, while later roles expanded his skills in leadership, guest service, and catering logistics. As a catering manager, he developed a strong understanding of both back-of-house execution and front-of-house coordination.
At just 17, Chef Croux took over his family’s catering operation and reintroduced it as Croux and Company Catering. Through determination and attention to detail, he built a loyal client base and became known for custom menus and high-quality service tailored to each event. In 2019, Chef Croux relocated to the Coachella Valley with his family. When the pandemic brought unexpected challenges to the hospitality industry, he adapted quickly. He launched Foodie Fridays, preparing meals from a food tent at his home. The concept gained momentum, attracting weekly guests and opening doors to additional catering opportunities. As events gradually returned, Chef Croux expanded his presence at local farmers markets and Palm Springs Villagefest.
Chef Croux’s connection with Outdoor Resort Indio began when he was invited to cater a resort event. That introduction led to his role overseeing Café Oasis. Managing a full-service café has been both a professional milestone and a rewarding experience, especially through the relationships built with ORI residents and staff.
Alongside Café Oasis, Chef Croux continues to cater large-scale and high-profile events throughout the desert. His experience includes major music festivals and private events for well-known artists and athletes, reflecting the trust placed in his culinary skills and professionalism.
When he is not in the kitchen, Chef Croux enjoys spending time with his family, discovering new cuisines, traveling, and playing guitar. Music remains a creative outlet that complements his work as a chef.
